Chai Kuih Or Or kuih skin ingredients :- 1. Tapioca starch = 120g 2. Wheat starch = 120g 3. Salt = 1/2 tsp 4. Water = 350ml How to prepare :- (A) Ready pan to heat up the water until super boilling . (B) Prepare the starch ingredients - Mix Tapioca starch , wheat starch and salt together and stir well before pour the hot water . (C) Mix (A & B ) together and stir well which show on video then close with cloths and rest for 15 minute . (D) 15 minute later , add little oil due to non sticky your hand and knead until the dough become soft and shining . Then cover with cloth and rest for 10 minute . (E) 10 minute later , now you can open the cloth and start to knead again for the cuting shape as show on my video . (F) Ready cling wrap and put on top the table , then put the cutting dough on to cling wrap as show on my video . (G) Now use the wood roller to roll the dough until become flat to reach 2 mm thick , after that you only can add ku chai or bang kuan char on to you flat dough and fold well as show on my video . (H) Pre heat steam and apply some oil for the dough topping before steam . Steam timing will take 15 to 17 minute . ( I ) 15 minute later ,careful open the cap and wait until the dough skin setting and cold down then you only can take out for display or eat . ( J ) Let's Eat Ku chai ingredients Cooking Oil = 4 tbsp Dry Prawn = 5 tbsp Garlic = 3 Shallot = 2 to 3 Sugar = 3 to 4 tsp Ku chai ( Chives ) = 300g or more Step 1 Chop Garlic , shallot and ku chai ( Chives ) but Ku chai must separate with the garlic and shallot Step 2 Heat up pan and add oil , garlic and shallot to fried until golden color with final add sugar and keep stir. After that let it cold before mix the ku chai . Make sure ku chai have to be raw.
