FULL RECIPE For Dough 250g Bread Flour 250g All Purpose Flour 10g Salt 10g Yeast 70g Sugar 1pc Egg 100g All Purpose Cream 130g Ice Cold Water ( or as per needed ) 1-2pcs Orange zest 50g Butter For Filling 100g Muscovado 100g Brown Sugar 5tsp Cinnamon Powder 1/4 tsp Cardamom Powder 1/4 tsp Salt 1Tbsp All purpose flour 1 Egg 50g butter For Frosting 200g Cream Cheese 150g All Purpose Cream 50g Powdered Sugar *PROCEDURE* FOR FILLING combine all ingredients mix well until smooth and set aside. **CHEFS NOTE - you can adjust on cinnamon or you can sprinkle on top after baking FOR FROSTING combine all ingredients mix until smooth and creamy. **CHEFS NOTE - you can adjust in sweetness and cream in this recipe if you want on more sweet and runny frosting. FOR DOUGH 1. Combine all ingredients except butter, mix from low to medium speed until you form a dough. ** CHEFS NOTE- amount of water is always as per needed 2. Add butter then mix in low speed until butter is well incorporated. 3. Change to high speed until smooth and elastic. 4. Cover in plastic wrap and chill for 1-2 hours. 5 Flatten dough into rectangular shape then spread cinnamon filling. 6. Roll the dough from top towards the end, lock the seam. 7. Cut into small pieces approximately 1-2 inches. 8. Put it in a well greased pan then proof until double in size. 9. After proofing bake at 180c for 12-15 or until done. Let it cool and set aside. 10.
