Delicious Amaretti Almond Cookies! Also called Amaretti Morbidi, they are soft and chewy on the inside, and a little crunchy on the outside. They are also incredibly quick and easy to make. And also gluten free! Ingredients: 2 egg whites from large eggs 2 cups (200g) almond flour 2/3 cup (134g) granulated sugar Zest from 1 lemon (Optional) 1/2 teaspoon almond extract (Optional, but highly recommended) Powder sugar (for the coating) Recipe: 1) Preheat the oven to 325F (165C), and line a baking pan with baking paper or a silicon baking mat. The preparation of the cookie dough only takes about 15 minutes. 2) In a bowl, beat the egg whites until they become foamy. It doesn't really matter if you beat them until soft or medium peaks, but just foamy is enough. 3) Add the almond flour, granulated sugar, and if you want to, the optional lemon zest and almond extract. Mix until it's combined. If at some point you find it hard to combine with just a spoon, you could also use your hands. 4) Use your hands to roll the dough into balls the size of walnuts. Then roll the balls in powdered sugar, and place them on the baking paper or silicon mat, around 2 inches (5cm) apart from each other. 5) Bake the cookies for 25 to 30 minutes, until they've cracked slightly and until bottoms are golden brown in color. 6) Once out of the oven, let them cool down for 10-15mins.
