Oyster Sauce Chicken Recipe *Ingredients:* *Chicken:* 14.11 oz (400g) boneless, skinless chicken thighs, cut into bite-sized pieces *Marinade:* 1 tbsp Shaoxing rice wine 1/2 tsp sugar 1/4 tsp salt 1/8 tsp white pepper 1 tbsp cornstarch 1 tbsp water 1 tbsp cooking oil *Vegetables:* 8.47 oz (240g) onion, sliced 3 slices ginger 2 cloves garlic, sliced Scallions, chopped (separate white and green parts) *Sauce:* 1.5 tbsp oyster sauce 1 tsp dark soy sauce 2 tsp honey 1/8 tsp white pepper 3 tbsp water *Finishing:* 1 tsp sesame oil *Instructions:* 1. *Marinate the chicken:* In a bowl, combine the chicken with Shaoxing rice wine, sugar, salt, white pepper, cornstarch mixture, and cooking oil. Mix well and let marinate for 15 minutes. 2. *Prepare the sauce:* In a separate bowl, whisk together oyster sauce, dark soy sauce, honey, white pepper, and water. Set aside. 3. *Sauté aromatics:* Heat cooking oil in a pan or wok over medium heat. Add ginger slices and the white parts of the scallions. Sauté until fragrant. 4. *Cook the chicken:* Add the marinated chicken to the pan and cook until golden brown on both sides. 5. *Add vegetables:* Add garlic slices and onions to the pan. Stir-fry until the onions are translucent. 6. *Simmer in sauce:* Pour the prepared oyster sauce mixture over the chicken and vegetables. Cover the pan and simmer for 2 minutes. 7. *Finish and serve:* Uncover the pan, increase heat to high, and cook until the sauce thickens. Stir in the green parts of the scallions and drizzle with sesame oil. Serve hot with rice.
