You Gotta Frittata! The frittata is an easy and low-cost egg recipe good for any meal, anytime of the day... especially for busy working mornings and back to school breakfast. Just a few eggs are the only essential ingredient, then raid the fridge for veggies, cheese, and leftovers to customize. This frittata cooks on the stove top in just a few minutes, no need to turn on the oven. The perfect quick meal that is still elegant on a budget. Enjoy! For an 8 inch nonstick skillet... Cut any veggies or other fillings into bite sized pieces. Add one tablespoon of olive oil to the pan set over medium heat. Add desired fillings to the hot oil and sauté until everything is tender and cooked through. Meanwhile crack 3-4 large eggs into a small bowl. Add 1 tablespoon of milk or water, plus seasonings and herbs. Whisk to combine. With the back of a spoon, distribute the cooked fillings evenly on the bottom of the skillet. Pour in the egg mixture. Optionally, add cheese over the surface of the eggs. Cover the pan, lower the heat to medium low, and cook the frittata, covered and undisturbed, until the center is puffed and the eggs are fully set (about 8-12 minutes for an 8 inch sized skillet). Once set, remove the pan from the burner and allow the frittata to rest for 3-5 minutes covered. Transfer to a cutting board, slice and enjoy!
