Roasted Tomato Soup 2 servings (recipe from my app): 500g tomatoes 1/2 yellow onion 2 garlic cloves 1/2 tsp dried basil 1/2 tsp dried oregano 1/4 tsp salt 1/4 tsp black pepper, ground 115g (half a can) cannellini beans or any white 1/2 tbsp nutritional yeast 1. Preheat the oven to 225C/435F 2. Roughly cut the onion in big chunks. Peel the garlic (or place them whole as I did in the video for no oil option) 3. To an oven safe form, add the tomatoes, onion, garlic, spices (not nutritional yeast) and a splash of vegetable oil (or without oil as I did in the video) Give it a mix and then roast for about 25 minutes 4. Meanwhile, you can toast bread slices and cut them in cubes. Also drain and rinse the beans 5. When the tomatoes are done, remove them from the oven. Add everything to a big blender, including the beans and nutritional yeast (or to a big pot and use a hand mixer) and blend until smooth 6.
