Ingredients: 3 cups all purpose flour 1 1/2 tsp instant yeast pinch of salt 3/4 cup sugar 1 cup of warm milk (110 degrees) 1/4 cup sunflower or vegetable oil 1 1/4 cup sweetened grated coconut 1 egg yolk + 1 tbsp milk For the sugar syrup 2 tbsp of sugar 2 tbsp of water Preparation: Add the yeast in the milk with a bit of sugar stir and let sit until rise. In an stand mixer with a dough attachment add flour, salt, sugar and the yeast mixture let the machine knead the dough for 10 minutes. Remove from the bowl and knead the dough by hand on a floured surface for a minute. Transfer to a greasy bowl cover with plastic wrap and let rise in a warm place until double in volume. Preheat oven to 425 degree. Line two trays with parchment paper. Divide the dough into 8 equal pieces flatten and fill with coconut and close it properly. Arrange them on the trays brush with egg wash and bake for 15 to 20 minutes or until golden brown. In a sauce pan heat the sugar and the water and brush over the macacha coco.
