Cut 400 grams of flank steak with the grain into three equal strips, then slice each strip thinly against the grain. 2. In a small bowl, marinate the beef with 1 tablespoon soy sauce, 1 tablespoon Shao Hsing rice wine, ½ teaspoon baking soda, and 3 teaspoons cornstarch. Mix well to coat evenly. 3. Cut the onion into small wedges. 4. Roughly chop the garlic. 5. Roughly chop the ginger. 6. Separate the green and white parts of the spring onions. Cut the white part lengthwise in half, then cut it into 3–4 cm pieces. Cut the green part into 3–4 cm pieces as well. 7. In a small bowl, combine ¼ cup soy sauce, ¼ cup chicken broth, 3 tablespoons brown sugar, and 2 tablespoons Shao Hsing rice wine. Stir well until the sugar is completely dissolved. 8. In another small bowl combine 1 tbsp cornstarch and 1 tbsp cold water and mix well. 9. Heat up a wok or pan over high heat and swirl in 2-3 tbsp of oil. 10. Add the beef to the wok, spread it out evenly, and let it sear for 1 minute without moving it. Then flip the beef and stir-fry for another minute until it’s about 80% cooked. Remove it from the wok and set aside. 11. Add 2–3 tablespoons of oil to the wok if needed, then add the onion, ginger, and garlic. Stir-fry for 30 seconds. 12. Pour in the sauce and let it simmer for about 30 seconds, stirring occasionally. Then add 2-3 teaspoons of the cornstarch slurry and continue simmering until the sauce thickens to a sticky consistency. 13. Return the beef to the wok and toss everything together so the sauce coats the meat evenly. Then add the spring onions and give everything a final toss to combine well. 14.
