Hi! Today I'm visiting Houston Farmer's Market with my mom, mainly to buy mole paste and nopalitos. I wanted her to see how nice the renovated farmer's market looked (formerly Canino's) and she loved it! Then we'll go to the kitchen and make chicken mole and Mexican red rice. Technically, it's red rice "a la jardinera" since I added a veggie mix, but it's still red (and easy)! Adding veggies is a great way to add more bulk to your rice. This version of red rice is our go-to since it's faster and there's no need to use a blender for blending tomatoes. Less bulky dishes to wash!
