Have you ever wondered what Brett is? If you're into craft-beer or wine making you have probably heard the mention of Brettanomyces. At newair we pride ourselves in making the best in wine and craft beer storage systems. We understand that being a wine expert is knowing exactly what creates flavor. One of the questions that comes up a lot is “What is Brett?” (or Brettanomyces). We recently caught up with sommelier Will Burtner at The Privateer Marketplace in Oceanside California to get a lesson on wine. You may know Will from television as WILL THE WINE GUY. Will, holding a glass of red wine to his nose, tells the class: “When you put your nose into this you’re probably going to pick up a pretty big, intense aroma, and what that is is a little bit of Brettanomyces; ‘Brett’ essentially. Anybody who knows beer fairly well know, kind of, what Brett is; it gives you a little bit of that barnyard kind of nose. The cool thing is that when you use it properly, which they’ve done in this, it adds character to the wine, if they over-do it, it ain’t nice, let me tell you, it’s really gnarly. But if they do it right, which is what they did with this… man, what a fantastic wine.” One of the students asks: “Why do they do that?” Will responds: “Just to add character to it. They add a little bit of Brett, they don’t fight it off, they don’t do any of that stuff because they want to, like I say, add a little bit more character to the wine” In the fermentation process there are different species of yeast, and until recently Brettanomyces was thought to be the bad guy. When craft-beer started using Brett to bring out more diverse flavors the tables turned. UC Davis, the world’s leading authority on viticulture, did an extensive study and discovered that when Brett is used right it can bring out various aromas that actually accentuate the wine, especially when pairing it with similarly flavored foods.
