I made this bread, and have shared it with a number of people. Everyone loved it, but no one guessed the ingredients! This is Ezekiel bread (inspired by the ingredients in Ezekiel 4:9). This recipe is from the book by Sue Becker, The Essential Home-Ground Flour Book. The ingredients for the flour are: 2 1/2 cups red wheat berries 1 1/2 cups spelt berries 1/2 cup hulled whole barley 1/4 cup hulled whole millet 1/4 cup dried lentils 2 tbsp dried great Northern beans 2 tbsp dried kidney beans 2 tbsp dried pinto beans The bread ingredients are: 4 cups hot water (130 degrees) 1/2 cup oil 1 cup liquid honey 2 tsp salt 8 1/2 cups (1 batch) freshly milled Ezekiel flour, divided 2 tbsp quick-rising (instant yeast) All of the ingredients for this bread can be found at Azure Standard.
