Ingredients 1/2 cup extra virgin Greek olive oil, divided 3 large red onions, halved and sliced 12-14 cherry tomatoes, halved 1 scant teaspoon dried oregano Pure Greek sea salt 2 cups Greek yogurt 4 garlic cloves, minced, divided Finely grated zest of 1 lemon 1/2 cup very finely chopped fresh mint 1/2 cup finely chopped fresh basil 1/2 cup finely chopped fresh thyme 1/2 cup finely chopped fresh parsley 1/2 cup finely chopped fresh oregano Black pepper to taste 1 pound bowtie pasta (fiogkakia) 2/3 cups walnuts, coarsely ground Instructions In a medium skillet, heat 2-3 tablespoons of olive oil over low heat and cook the onions until deep golden and caramelized, about 15 to 20 minutes. Stir occasionally. While the onions are cooking, prepare the tomatoes and yogurt: Place the halved tomatoes, dried oregano, salt, and 1 tablespoon of olive oil in a small bowl and marinate until ready to use. Combine the yogurt and all but 1 teaspoon of garlic in a bowl. Stir in a pinch of salt, 2 tablespoons of olive oil, and the lemon zest. Mix all the fresh herbs together and set aside. Coarsely grind the walnuts by pulsing on and off for a few seconds in a small food processor. Toast the walnuts in a dry skillet and a few seconds before removing, stir in the remaining 1/2 teaspoon of garlic and a pinch of salt. Cook the pasta in boiling salted water and drain, reserving 2 cups of its cooking liquid. Transfer to a bowl. Toss the pasta with 2 tablespoons olive oil. Assemble the dish: Place the pasta in a large, wide bowl or shallow platter. Add the caramelized onions, herb mixture, remaining olive oil, and yogurt. Add enough cooking liquid to make the sauce creamy. Stir in the lemon zest and black pepper. Add the toasted walnuts. Toss all together and serve, sprinkled with the marinated tomatoes scattered around the plate. Serve hot, sprinkled with a little Greek sea salt.
