Most of the tissue of the pancreas is devoted to producing the enzymes used to digest food in the small intestine. The cells which produce these enzymes are arranged in circular structures called acini and they release their secretions into the centre of the acinus. The acini in turn feed into ducts, which feed into bigger ducts and so on, until eventually the secretions are fed into the main pancreatic duct which feeds into the duodenum via the ampulla of Vater. The pancreas also contains small islands of cells amongst the exocrine tissue, whose job is instead endocrine secretion. These are called the Islets of Langerhans and produce many important endocrine hormones, the most famous of which is of course insulin.
