How to identify vintage wines by their chemical signature

Is it possible to identify a #wine 🍷 solely by its chemical components? The wine sector 🍇 has tried to answer this question numerous times, without any convincing results. Wines are extremely fine and complex mixtures of several thousand molecules, making it difficult to carry out an exhaustive analysis. A team from UNIGE and Institut des Sciences de la Vigne et du Vin at the University of Bordeaux, has found the solution using artificial intelligence analysis tools 💻. The scientists started with chemical data from 80 red wines, from twelve vintages and seven different estates in the Bordeaux region, which they processed using machine learning techniques. This method made it possible to analyse the huge amount of information on the components of these wines and to group them according to their similarities. This research, published in Communications Chemistry, paves the way for new tools to combat counterfeiting and to guide the decision-making of wine producers. It was conducted by Alexandre Pouget and Michael Schartner, respectively full professor and former post-doctoral scholar in the Department of Basic Neurosciences in the Faculty of Medicine at the UNIGE, and Stéphanie Marchand, researcher at the Institut des Sciences de la Vigne et du Vin at the University of Bordeaux.
