The Cauliflower Mushroom is one of the ultimate finds if you're mushroom foraging here in the Pacific Northwest ... or anywhere. One of the things that makes this wild mushroom so special is the incredible range of ways to prepare it in the kitchen - this is a choice edible mushroom that chef's love to work with. And aside from that, its relative rarity makes it a true joy to stumble across while mushroom picking. Our local species of Cauliflower Mushroom (Sparassis radicata) was once frequently referred to as "Sparassis crispa" ... but that is a name based on European taxonomy, and the species that we have here in the PNW is a slightly different one that goes by the same common name. Here in Western Washington, you'll most often find this saprobic mushroom growing from the root networks of Douglas Fir and Spruce. Although you'll find the fruiting body on the forest floor, its taproot is reported to often root down over 6 feet below the surface! There aren't too many mushrooms out there in my local forest that look remotely similar to this one and, for that reason, it is widely regarded as a great mushroom for both expert mycologists and beginner mushroom foragers to seek out. This is one of my absolute favorite mushrooms! And it doesn't just have a reputation as being a choice edible mushroom, but it is also widely regarded as being highly medicinal.
