Smoked beef tallow is one of the easiest things you can make, and it makes a HUGE difference in a wide variety of recipes! We’ve used our homemade beef tallow to make flour tortillas, and to sear a steak on the griddle, just to give you a few examples. If you’re cooking a brisket, or if you’ve got a lot of beef fat trimmings, just add them to an aluminum foil pan and smoke them on the pellet grill or smoker until the fat is rendered. Continue to cook until the fat is completely rendered. Then, allow to cool slightly and pour the liquid into a mason jar.
