Elevate your dessert game with this delicious cake creation by @blackstarpastry 🍓🍉 I used the @gourmettraveller recipe with some tweaks - the flavours were on point! Hope my short video helps you recreate this at home. Enjoy! 🍰 Ingredients: For Almond Dacquoise: ⅔ cup almonds ⅔ cup soft icing sugar 5 egg whites ½ cup caster sugar To Macerate Fruits: 250gm seedless watermelon, thinly sliced 15 strawberries, halved 10 seedless red grapes, halved ¼ cup rosewater 2 tbsp caster sugar For Rose Cream: 400ml thickened cream 2 tbsp caster sugar 2 tbsp rosewater For Layering: 40gm almond meal For Garnishing: 1 tbsp crushed pistachios 1 tbsp dried rose petals Method: 1. For Almond Dacquoise: Preheat oven to 200°C. Blend almonds, transfer to a bowl and combine with icing sugar. Whisk egg whites until soft peaks form (3-4 mins), then gradually add caster sugar and whisk until stiff peaks form (1-2 mins). Gently fold through almond mixture. Line a 20cm x 20cm baking dish (with a removable base) with baking paper, add half the almond dacquoise batter, flatten it evenly and bake until golden (10-15 mins). Set aside to cool and remove. Then, bake the second layer and cool. 2. To Macerate Fruits: Arrange 🍉, 🍓 & 🍇 in a single layer on a wire rack and brush / sprinkle rosewater & caster sugar. Stand for 30 minutes and pat dry with paper towels. 3. For Rose Cream: Whisk cream and sugar until soft peaks form. Gradually add rosewater and whisk to combine - do not over-whisk. 4. For Layering: Line a 20cm x 20cm baking dish (with removable base) with baking paper. Place the first layer of the almond dacquoise and evenly spread one-third rose cream. Scatter with half the almond meal, then top with watermelon and scatter remaining almond meal. Spread half of the remaining cream and add the second layer of the almond dacquoise. Then, spread over remaining cream and refrigerate until firm. 5. For Garnishing: Arrange the macerated 🍓 & 🍇 on top of the cake, garnish with pistachios & rose petals and serve. #blackstarpastry #homemadedessert #watermeloncake #watermelon #desserts #mouthwatering #strawberries #roseflavour
