I went to the store for soup ingredients, but Emilio’s breathing got worse, so I took him to the hospital. Respiratory gave him a nebulizer treatment, and the doctor gave him a long-lasting steroid that works for 3 days. About 3 hours in, he started breathing better and his runny nose slowed down. We got discharged, went straight home, and I immediately started cooking soup and finishing laundry — even though I was sweating and my body was aching. Mom mode doesn’t clock out. 🍗 Ingredients (Family of 8) 2 chicken breasts 4–6 chicken thighs (some skin removed) Season with Adobo, salt, garlic, oregano & cumin to taste 5 garlic cloves 2 potatoes 3–4 carrots, peeled & chopped 6 cilantro sprigs 5–6 spoonfuls sofrito 1 tsp oregano 1 chicken bouillon cube or packet 1 sazon packet 2 cups soup noodles 10 cups water Salt to taste (I also add extra garlic depending on preference.) 👩🏽🍳 How I Make It Step 1 – Cook the Chicken Boil chicken in 10 cups of water for about 1 hour. Remove chicken and let it cool. Step 2 – Build the Flavor In the same chicken broth, add: Carrots Sofrito Garlic Bouillon cube Sazon Oregano Cumin Salt to taste Cook about 15 minutes until carrots are semi-soft. Step 3 – Potatoes Cook potatoes separately. Step 4 – Bring It Together Shred chicken into small pieces. Add shredded chicken back into the carrot broth. Add cooked potatoes.
