Beetroot Cutlet. We know how hard it is to get kids to eat vegetables. Especially the vegies that are most important for their health but unfortunately do not taste as good as their favourite burger or pizza. Don’t you agree? To save you from such issues, we came up with a plan for all the mothers. ‘Why not make such vegies more interesting by making it look so irresistible to their eyes?’ Well, Beetroot is one such vegetable that has high concentration of nitrate and vitamin C that is good for skin and blood pressure. It contains antioxidants that protect body cells from damage and aids better digestion, especially in kids. To make beetroot a part of ‘happy meal’ for your kids you can try making a snack out of it and that is exactly what we are going to do today. BEETROOT CUTLETS Beetroot cutlets are easy to make yet very effective when it comes to providing the right nutrition to your children and family in general. PREPARATION TIME- 45 MINUTES COOKING TIME – 25 MINUTES INGREDIENTS- • Oil • Onion • Green Chilly • Ginger-garlic Paste • Beetroot • Black Pepper Powder • Cumin Powder • Garam Masala • Chaat Masala • Potatoes • Coriander Leaves • All-purpose flour • Breadcrumbs PROCEDURE- • Firstly, grate 2 numbers of beetroot into slices and squeeze off the juice. Set them aside in a bowl. • In a pan, add 2 tablespoons of oil,1 sliced onion and 2 chopped green chillies. • Sauté for few seconds. • To this add 2 numbers of grated beetroot, 1 ½ tablespoon of ginger garlic paste, salt and black pepper. • Mix them well. • Now, add ½ tablespoon of cumin powder, 1 tablespoon of garam masala, 1 tablespoon of chaat masala and mix well. • In the same bowl, add 3 numbers of mashed potatoes and coriander leaves. • Mix them / combine them well and prepare the rounded patties. • In a another bowl, add 4 tablespoons of all-purpose flour, pour some water and mix well to get smooth consistency. • Now, dip the patties into the flour mixture on both the sides. • Similarly, now roll them into the bowl filled with bread crumps on both the sides. • Refrigerate the patties for 15 minutes and later proceed with frying them on the medium flame. • Flip and fry on both the sides until they turn golden and crisp. • Finally drain the patties over kitchen paper to remove excess oil and serve your family with tomato sauce. BONUS TIPS - 1. Take care that potatoes while boiling don't absorb excess water. If they do, after cooking place the potatoes on tissue paper so that excess water leaves. 2. You can add any other mixed veggies in the recipe if you prefer. 3. You can either deep fry them or shallow fry them on tawa. Both taste equally good. But if you are making on a large quantity, it’s better to deep fry them.
