The BEST and EASY all year round cookies!! Being half Polish and growing up in Chicago, I grew up on Kolacky cookies, especially during the holidays! This is one of my most requested cookies from friends, family and co-workers. With different varieties of fruit fillings and the sweet powdered sugar on your tongue, these cookies will be a hit whenever you share them! Kolaczki cookies are a delicious fruit filled cookie, a Polish cookie, and a popular one in Chicago. Whenever I make these for any get together or holiday party, they get eaten pretty quick. These cookies are sure to steal your heart and become one of your favorites. This easy recipe is a great go to because it’s easy, but amazingly delicious. Oven 350 Bakes 15-20 minutes RECIPE: 1 package of Cream Cheese (8 oz) 1 C. or 2 Sticks of unsalted Butter (softened) 2 1/2 C. Flour 1/2 Tsp. Salt Chill at least 1 hour or can store in refrigerator up to 2 weeks Filling: My favorite is the Solo brand. Note: Any cake or pie filling preferred over jam. If using jam, needs to be thick and does not melt easy, or will run off of cookies. Pie and cake fillings are made more thick and to hold up during baking. Additional note: This recipe does not call for eggs, so this is a great recipe for those who have allergies to eggs. Roll out to a tad bit under 1/4" thick, or you can test one by rolling it out, baking and tasting it to see if you like this thickness or prefer thicker or thinner.
