This smoked picanha is my new favorite way to make picanha on the pellet grill! Instead of cutting it into steaks, we smoked the picanha whole until it was a good rare to medium-rare. Then, we "seared" or fried the top fat layer in a bit of smoked beef tallow. Next we sliced it thin against the grain. The result was the BEST picanha that we've ever had!
