Check out my playlists: Breads: • Breads Cakes: • Cakes Christmas/Holiday: • Christmas/ Holiday Baking Cookies: • Cookies Meals/Side dishes: • Meals/Side Dishes All cooking videos: • Cocina Let's Go Cooking Videos Recipe for Pecan Pineapple Upside Down Cake Bake at 350F (175C) Baking time: 1 hour or until knife in center comes out clean Ingredients: 1 cup butter plus 2 Tablespoons, melted 2 cups brown sugar 2 cups pecans, chopped 1-2 cans (20 ounce cans/567gram cans) pineapple slices 8 eggs, separated 2 teaspoons vanilla 2 cups sugar 2 cups flour 2 teaspoons baking powder ¼- ½ cup brandy or rum (to pour on right after cake is done and flipped over) Steps: Melt 1 cup butter on stovetop or microwave. Add brown sugar, stir gently till dissolved. Remove pan from heat if done on stovetop. Add this melted mixture to a 13x9 inch rectangle pan, OR use two 9 inch round cake pans. Place over the melted butter and sugar mixture: 2 cups Pecans, chopped Add Slices of canned pineapple. Set aside. Now, we make the cake dough: Beat egg whites till stiff. Slowly add the 2 cups white sugar. Set aside. With the same beaters, beat egg yolks until thick. add 2 Tablespoons melted butter and 2 teaspoons vanilla Fold in the egg yolk mixture into the egg whites. Now add the flour and baking powder. Cover the fruit/pecan mixture with this batter. Preheat oven to 350F (175C) Bake for 50 minutes to 1 hour. Done when knife in center comes out clean. As soon as cake is done, flip over onto serving dish. LEAVE PAN over cake about 5 minutes to let brown sugar mixture coat the cake While still hot, add brandy or rum over the fruit. You can serve just like that or add whipped cream. I hope you enjoyed this video!
