Today (March 8) is Mimosa Day, so I made it light and refreshing, inspired by the beautiful yellow color of mimosa. The secret to making a delicious custard cream is to use a heavy saucepan and cook it thoroughly while stirring so that it does not burn. Lemon eclair is perfect for spring, please give it a try☺. On Sunday, I'll show you a sweet treat made from three leftover egg whites... ♪ ▷Ingredients (for 10 pieces): ■Lemon custard cream 3 egg yolks 70 g cane sugar 1 lemon zest, grated 16 g rice flour or cake flour 250 g milk 30 g lemon juice ■Puff pastry dough 70 g unsalted butter 115 g water 1g salt 75 g rice flour 3 whole eggs ■Lemon icing 45 g powdered sugar 10 g lemon juice ▷How to make: 1. make the custard cream. Add the millet sugar to the egg yolks and mix until white. Add lemon zest, rice flour, and milk, in that order. 3. Heat the custard liquid over medium heat, stirring frequently, until thickened. 4. Transfer the custard mixture to a clean baking pan, cover it tightly with plastic wrap, and cool it with ice water. 5. Break up the custard cream, add lemon juice and mix well. 6. Make the puff pastry dough. Put unsalted butter, salt, and water in a saucepan and heat. When the butter melts and the mixture comes to a boil, turn off the heat, add the rice flour and mix well. 7. Heat over medium heat again for 30 seconds and transfer the puff pastry dough to a bowl. 8. Add beaten eggs until a glossy dough is formed. Squeeze out the dough. 9.Bake in a preheated oven at 170℃ for 40-45 minutes. 10. Fill the eclairs with custard cream and decorate with lemon icing, lemon zest and pistachios.
