Today I’ve cooked a Sri Lankan favourite which is a spicy stir-fry potato dish. It has a wonderful balance of chilli, tang, and aromatics. Each spice plays a purpose in the finishing bite which is embedded in the soft fluffy potato. One bite and you’re craving for more! Most everyone loves potatoes so if you love them like I do, try this version which is bursting with flavour! *Correction* The ingredient list in the video should read 1 Teaspoon Mustard Seeds ( Not 1 Teaspoon Mustard ) See below for corrected ingredient list. INGREDIENTS 800g New potatoes peeled & quartered 2 medium red onions sliced 2-3 cloves sliced garlic 1 teaspoon pepper 1 teaspoon salt (or to taste) 1 teaspoon turmeric 1 teaspoon mustard seeds 2 tablespoons coconut oil 2 cloves 2 bruised cardamom pods 1/4 teaspoon cumin seeds 1/2 teaspoon chilli powder (or to taste) 3 green chillies sliced 2, one inch pieces of pandan leaves 1 tablespoon crushed chilli (chilli flakes) 2-3 pinches of Maldives fish (soaked for 20 mins) 1 broken cinnamon stick 1-2 sprigs curry leaves
