Learn how to make 'Tiranga Pulav, a very easy to make pulav recipe by chef Kanak to celebrate the 68th Republic Day of India Ingredients: 3 cups of cooked rice White Layer: 2 tsp oil 1/2 tsp cumin seeds 1/2 cup small paneer pieces salt to taste Orange Layer: 2 tsp oil 1/2 tsp cumin seeds 1 tbsp ginger garlic - crushed 3/4 cup tomato puree salt to taste 1 tsp kashmiri red chilli powder Green Layer: 2 tsp oil 1 tbsp ginger garlic green chilli - crushed 1 cup spinach puree salt to taste 1/2 tsp garam masala 2 tsp lemon juice Method: To prepare the white layer rice: Heat oil in a wok. Add the cumin seeds. Once it starts crackling, add the onions to it and saute for a while. Add the paneer pieces and stir for a while. Make sure it does not change its colour. Once it is fried enough, immediately add the cooked rice to it along with salt and toss slightly. The white layer of rice is ready. To prepare the orange layer rice: In the same wok, add oil and cumin seeds. Once it starts spluttering, add the ginger garlic to it and saute for a while. Add the tomato puree, salt and red chilli powder and let it cook for around 2 - 3 minutes. Add the cooked rice and toss well until you get nice orange coloured rice. Take a plastic box / tin / bowl and cover it with a cling film. Brush some oil over it and transfer the orange layer of rice into it. Using a spatula, flatten the rice and make an even layer. To prepare the green layer rice: In the same wok, heat some oil. Add the ginger garlic and green chilli paste and saute for a while. Add the spinach puree and cook for a while. Add salt, garam masala and lemon juice and mix well. Lastly, add the last layer of rice to it and toss well to get a nice green coloured layer. Also, add some fresh coriander leaves and mix well. To assemble: In the container which contains the orange layer of rice, add the white layer of rice and flatten it to form an even layer. Then add the green coloured rice and even it out using a spatula. Then turn the container upside down on a plate.
