You can`t beat a good pie, especially when it`s homemade. Jeff the Chef the pie is amazing. Super delicious and easy to make. Love It. If you`d like to make a vegetarian version, omit the lard and just use butter. Ingredients : Pastry : 60g Butter, cut into small pieces 60g Lard, cut into small pieces 200g Self Raising Flour, plus extra for dusting (plain will work fine too) The Filling : 25g Butter 3 Onions, roughly chopped 250g Lancashire Cheese, grated Salt and Pepper Milk for sealing and glazing. Method : For the Pastry : Place the butter, lard and flour in a bowl with some salt, rub together gently until it forms breadcrumbs. Add 2-3 Tablespoons of cold water and mix together to make a dough, Wrap in cling film and place in the fridge for 30 minutes. For the Filling : Heat the butter in a saucepan and fry the onions for about 10 minutes, without colouring, stir in 150ml water, salt and pepper and cook until most of the liquid has evaporated. Remove from the pan and allow to cool. Roll out 2/3 of the pastry and line a greased 20cm loose-bottomed tin, leaving excess pastry overhanging. Roll the remaining pastry enough to cover the pie once filled. Cover the base of the pie with half the onion then cover with half the cheese, repeat this until all the onion and cheese has gone. Brush the edges of the pie with milk and add the lid. Seal the edges together, trim the excess with a sharp knife and brush the top with milk and make 3 incisions on the top. Place the pie in the oven for about 40-45 minutes.
