Crispy Pork Belly 烧肉 (Siu Yuk) is a staple among Cantonese cuisine! The pork belly is roasted to perfection creating an ultra crispy skin and tender succulent meat. In Cantonese culture, siu yuk is often served during holidays like Chinese New Year and and many other special occasions. You will often times find them in Cantonese BBQ shops next to other popular roast meats like cha siew (bbq pork) and roast duck. All of which are super delicious 😋 Making crispy pork belly involves a meticulous drying and roasting process. The key is the get the skin ultra dry through scoring, salting, applying vinegar and more. The steps are simple but it does take 2 days for this recipe, mainly because we want to make sure the skin dries out overnight (in the fridge) before roasting. I hope you enjoy this video!
