Lebanon PA, 4.5.20: Welcome to Pennsylvania Dutch County. Today, we're making homemade chicken pot pie, PA Dutch style, in Jo Ellen's Kitchen. Boil a whole chicken in the oven at 350 degrees for one hour. I started with an inch or two of water in the bottom of my pot. At 30 minutes, to the chicken add 1 cup chopped carrots, 2 potatoes-cubed, 1 cup chopped celery, and salt to taste. At one hour, remove the chicken and vegetables from the oven, and place the pot on the stove. Set aside to cool. Remove chicken from the bone when cool. Add water to make sure you have enough broth. I added 4 cups of water to my broth. Also add 1 tablespoon of butter and 2 chicken bouillon cubes. Bring to a boil. Add noodles one at a time so they don’t bunch up. Noodles will sink. When they start to float, the noodles are done. Directions for Noodles: 3 cups flour 2 large eggs 3/4 cup water Mix in a large bowl with hands. Kneed to make a ball. Place on floured mat. Roll out into a rectangle until dough is between 1.8” and 1.4” thick. Cut into 2" squares. Add squares to boiling broth one piece at a time. Stir cubed chicken back into pot. Cover. Occasionally, toss gently. Pot pie is done when noodles start to float. Voila! Enjoy.
