🥔 Tuck into tender Carisma potato slices blanketed in a crispy cheesy crust with this easy gratin recipe from Coles Ambassador Courtney Roulston. 🛒 Show your support for the Stephanie Alexander Kitchen Garden Foundation this July, with 0.25 cents from every Coles Australian Carisma Washed Potatoes 2 kg bag being donated to the Foundation to a maximum of $100,000. -- Cheesy Carisma potato gratin Ingredients: 20 g butter, softened 2 kg bag Carisma potatoes 200 ml thickened cream 150 g sour cream 2 cloves garlic, minced 2 tsp Dijon mustard 100 g cheddar cheese, grated 50 g Parmesan cheese, grated 2 tbsp thyme, leaves picked Sea salt and pepper, to taste ¼ cup dill sprigs, to garnish 1 lemon Method: Pre heat the oven to 190 °C. Grease the inside of a baking dish with the butter and set aside. Slice the potatoes into 2mm slices using a knife, mandolin or food processor. Place the sliced potatoes into a large mixing bowl. Add in the cream, sour cream, garlic, mustard, cheddar cheese, half of the Parmesan, half the thyme and a pinch of salt and pepper. Stir well to combine everything and coat the potatoes in the cream mixture. Stack a handful of the potatoes together then arrange in the baking dish until all of the potatoes are used. Pour any remaining cream mixture over the potatoes then grate over the remaining Parmesan cheese. Place into the oven and bake for 1 - 1 ¼ hours, or until golden and cooked through. Grate over the zest of the lemon, and garnish with remaining thyme leaves and dill before serving. -- Want to join the kitchen garden community?
