One of the most popular wild edible mushrooms is the Chicken-of-the-Woods, or Laetiporus sp. This beautiful and big mushroom grows on wood and is brilliant orange and yellow, and hard to mistake! It's one of the easiest to identify mushrooms there is, and it's also on a lot of peoples list of favorite mushrooms for it versatility. I have found and eaten this mushroom before and I wasn't impressed with the flavor, in fact, the last video I made about it I was repulsed and couldn't stomach a second bite, so this time I tried a recipe from the Modern Forager cookbook and was blown away! It was SOOO good. So in this video I show you what it looks like to find our local species of C.O.W. and how I prepared it. There are several species of the chicken of the woods, and they all taste similar and cook up the same, so no matter where you found your COW, this recipe will work for you. I hope you enjoy, and leave me some feedback on whether you like this type of video. If you’d like to dive a little deeper you can sign up for the 3 part intro to mycology course at the Olympic College in Bremerton. This is a non-credit class for personal enrichment. Aaron instructs the class in person, which covers what fungi is, how it grows, and its relationship to the world around it. The second class covers introduction to wild mushrooms and mushroom identification, and the third class goes over fungi cultivation and the history of mycological sciences and taxonomy. There is usually a foray into the woods for students who have attended the 3 classes. The classes are only offered in person right now, but they may be made into an online version soon. These videos are not intended to be a definitive field guide, but rather a starting point to become familiar with habitat, everyone is encouraged to do their own studies, acquire literature or internet resources to safely and confidently identify wild foods before they eat them. When eating a new wild mushroom, it is advised to start with only a small amount, and make sure that it is fresh and that it is cooked thoroughly. Some mushrooms do not agree with certain individuals, and this is typically discovered on a case-by-case basis. All the ideas expressed in the comments should be taken with a large grain of salt. I don’t think there is any other field of study or science that has more misinformation being shared so freely and boldly. Mushroom Wonderland and Aaron himself have no opinion and neither encourage nor discourage the use of mushrooms containing mind-altering compounds. These mushrooms contain powerful chemicals and should be treated with a high level of responsibility.
