Secret Recipe: Lon Kapi Shrimp Paste Dip Today's video is all about a Thai dish called Lon Kapi หลนกะปิ. Lon means to simmer and kapi is in reference to the shrimp paste in the recipe. Lon Kapi is a traditional Thai coconut cream based dip featuring fermented shrimp paste. It is served with raw vegetables, herbs, or fruit. It combines deep, savoury umami notes from the shrimp paste with a rich, creamy, sweet-fruity taste from coconut cream and palm sugar. Here's the recipe: 1.5 Banana shallots 4 stems of lemongrass (just the woody bit not the green) 2 tbsp of Dried shrimp 1.5 tbsp shrimp paste 400ml coconut milk 1 disc of palm sugar Juice from half a lime Fish sauce optional 50g spring onion roughly sliced 2 large sweet chilli thickly sliced Thai birds eye chilli (up to you) 5 Kaffir lime leaves As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
