Here's a simple recipe to make chicken bhuna khichuri: Ingredients: For Chicken Bhuna: 500g chicken pieces (with bone-in for more flavor) 2 onions, finely chopped 2 tomatoes, finely chopped 2 tablespoons ginger-garlic paste 2 green chilies, chopped 1 teaspoon cumin powder 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder Salt to taste 3 tablespoons oil Fresh coriander leaves for garnish For Khichuri: 1 cup basmati rice 1/2 cup split yellow lentils (moong dal) 4 cups water 1 onion, finely chopped 1 teaspoon cumin seeds 2-3 green cardamom pods 2-3 cloves 1 cinnamon stick 2 tablespoons ghee (clarified butter) Salt to taste Instructions: Wash the rice and lentils separately and soak them in water for about 30 minutes. In a pressure cooker, heat ghee over medium heat. Add cumin seeds, cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant. Add chopped onions and sauté until they turn golden brown. Drain the water from the soaked rice and lentils and add them to the pressure cooker. Stir well to mix with the onions and spices. Add chopped tomatoes and cook until they turn soft and mushy. Add cumin powder, coriander powder, turmeric powder, red chili powder, and salt to taste. Mix well and cook for 2-3 minutes until the spices are cooked through and the oil starts to separate from the masala. Add the chicken pieces to the masala and mix well, ensuring the chicken is coated with the spices. Cover and cook the chicken on low heat until it's tender and cooked through. Stir occasionally to prevent sticking. Once the chicken is cooked, add the cooked rice and lentils mixture (khichuri) to the chicken masala. Mix well to combine all the flavors.
