Ingredients: 6–7 clementines 3 eggs room temp Pinch of salt 80g (about 1/3 cup) sugar 100g (7 tbsp) butter, melted 150g (1 1/4 cups) flour 1 tsp baking powder 2 tbsp sugar (for topping) Powdered sugar (for dusting) Instructions: 1. Preheat the oven to 360°F (180°C). Grease and line a 9-inch round cake pan with parchment paper. 2. Prepare the clementines: Peel the clementines, remove seeds if any, cut them in half 3. Make the batter: In a large bowl, whisk the eggs, pinch of salt, and sugar until light and frothy. Stir in the melted butter and clementine. Sift in the flour and baking powder. Fold gently until smooth. Sprinkle 2tbsp of sugar on the pan Place the cut clementines facing down on the baking pan and add the batter over them. 4. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean. 5. Cool and finish: Let the cake cool in the pan for 10 minutes, then transfer to a cake plate. Dust with powdered sugar before serving.
