I'll share some of my favorite canning meals in a jar recipes, including ball canning one jar meals and rebel canning meals in a jar. I love how quickly the raw pack meals come together. I'll also show how to use the Nesco/Carey Digital Canner. #pressurecanning #makeaheadmeals #canningandpreserving Pork Fajitas Recipe: From Meals In A Jar by The Canning Diva (amounts listed are per quart jar, but do not can fewer than 2 at a time) *I recommend soaking beans for 7 hrs. prior to canning To each quart jar add: 1/2 C. dried beans (recipe called for 1 C but I recommend 1/2) 1/2 C. peppers 1/2 C. onion 1 diced roma tomato 1 lb. pork loin strips 1 T. fajita seasoning Add hot chicken broth to 1" head space. Pressure can quarts for 90 min. To serve, simply heat and enjoy. My Fajita Seasoning Recipe: 1/4 C. chili powder 2 Tbs. salt 2 Tbs. paprika 1 Tbs. onion powder 1 Tbs. garlic powder 1 Tbs. cumin 1 tsp. cayenne Pot Roast Recipe: From The All New Ball Book of Canning And Preserving (amounts listed are per quart jar, but do not can fewer than 2 at a time) To each quart jar add: 1 lb. boneless chuck roast, cubed in 2 in. chunks 1/2 C. peeled diced potatoes 1/2 C. diced onions 1/4 C. diced celery 1/2 C. sliced carrots 1 tsp. salt 1/2 tsp. black pepper 1 bay leaf 1 garlic clove, sliced 1 tsp. dried time 1/2 C. dry red wine (optional) Add hot beef broth to 1" head space. Pressure can quarts for 90 min. To serve, simmer with 2 Tbs. flour to thicken. Kung Pao Chicken Recipe (yields 5 quarts) From Meals In A Jar by The Canning Diva Ingredients: 1/4 C. soy sauce 1/4 C. rice wine vinegar 1/4 C. sesame oil 2-in gingerroot, peeled and minced (2 T.) 5 lbs. boneless chicken breast cut in 2" strips 6 red bell peppers, diced (about 7 C.) 1 onion, chopped (about 2 C.) 4 celery ribs, chopped (about 1 C.) 1 C. roasted unsalted cashews (or peanuts) 4 C. water 4 T. hoisin sauce 1/4 C. sugar Directions: 1. Combine soy sauce, vinegar, oil, and ginger. Add chicken and marinade fro 30 min.-2hrs, 2. Place chicken and marinade in a stockpot. Cook chicken. Add peppers, onion, celery, and cashews, and heat through, cooking for about 5 min. 3. Whisk together water, hoison, sauce, and sugar. Add mixture to the stockpot. Simmer for 10 min. 4. Use slotted spoon to distribute solids amon quart jars. Ladle liquid into quart jars, filling to 1" head space. 5. Process quart jars for 90 min. To serve, heat and serve over rice.
