These are traditional Ukrainian pyrizhky - the dough and filling kind of food, which is my favorite. Depending on the dough, filling, and preparation method, they can become a main dish, a snack, or even dessert. I made my pyrizhky with cabbage filling and potato mushroom filling. For the dough, I take kefir, but you may use clabber instead. So, for the dough, you will need: 2 1/2 cup all-purpose flour one cup kefir one egg 1/2 tsp instant yeast 1/2 tsp baking soda 1/2 tsp kosher salt 1 tbsp white sugar 1/4 cup vegetable oil 3 tbsp softened butter For the filling, I took cabbage, potatoes, button mushrooms, and onions. Make sure that the filling is not runny before putting it in. Then, shape and seal the buns the way you like better. Here I show you two methods of sealing the edges. Ideal pyrizhky are that remain fluffy even after cooling, but they taste better when served hot.
