This easy and authentic recipe is perfect for festivals, pooja, naivedyam and special occasions like Christmas. In this video, I share a step-by-step method to make soft, tasty rice laddus with simple ingredients available at home. This traditional sweet is commonly made in Konkani and South Indian households and is loved by all age groups. If you are looking for a quick and traditional sweet recipe without complicated steps, do try this Rice Laddu at home. Serve it during festivals or enjoy it as a homemade dessert. RICE LADDU RECIPE (Mangalorean / Konkani Style) A traditional Kuswar sweet, prepared with roasted rice, coconut and jaggery. A perfect Christmas delicacy and easy even for beginners. Ingredients For Roasting ½ kg Brown Boiled Rice / Kuchallakki Rice 50 g White Sesame Seeds 4–5 Cardamom Pods For the Mixture 1 – 1½ Dry Coconut (scraped or grated) ½ kg – 700 g Jaggery** (adjust sweetness as needed) ¼ cup Ghee (melted) 2–3 tbsp Rice Flour (to roll / dust the laddus) Method 1. Prepare the Ric 1. Wash the rice 4 times, drain completely. 2. Spread the rice on a colander to remove excess water. If sunlight is available, spread on a clean cloth and dry for 1–3 hours**. 3. Once drained, *roast the rice in batches* on low to medium heat. Do not burn. Roast until it changes colour slightly, turns crisp and you hear a **light splutter**. 4. Transfer to a plate and allow to cool completely. -2. Roast Sesame Seeds 1. In the same pan, add *white sesame* and roast for *3–4 seconds* on low flame. 2. Remove immediately once it turns slightly golden. 3. Grind into Rice Flour 1. Once rice is completely cooled, grind in small batches. 2. Add the *cardamom pods* while grinding. 3. Grind to a **fine powder**. 4. Transfer to a bowl and let it cool. 4. Prepare Coconut & Jaggery Mix 1. Scrape or grate the dry coconut. You can also cut into pieces and grind on *pulse mode* for faster work. 2. Scrape the jaggery and keep ready. 3. In a mixer jar, add little coconut + little jaggery. 4. Grind on pulse mode 2–3 times to combine. 5. Transfer the mixture to a **large vessel**. 5. Combine Everything 1. add white sesame or til 2. Sieve the rice flour into the coconut–jaggery mixture. . Add gradually—**do not add all at once**. 3. Mix well with hands. 4. If the mixture feels too soft or sticky, add a little more rice flour. 5. Reserve 2–3 tbsp rice flour for rolling the laddus. 6. Bind the Laddus 1. Warm the ghee and drizzle *2–3 tbsp* into the mixture. 2. Mix thoroughly—this helps to bind the laddus and gives aroma. 3. Hold a small portion and shape into smooth round laddus. 4. Dust with a little rice flour if needed. 7. Ready to Serve Your traditional ತಂದ್ಲಾಚೆ ಲಾಡು /Tandla Laddu / Rice Laddu** is ready to enjoy during the festive Kuswar season Tips You can roast and grind the rice and store the flour in an airtight container for **1–2 weeks**. Cardamom is essential to enhance the flavour. Do not over-roast sesame or rice—laddu will taste bitter.
