(1 kg) ground beef (85% lean) 1 large onion 3-4 garlic cloves 1 cup (240ml) dry red wine 1 cup (240ml) chicken or beef stock 28 oz (800g) crushed tomatoes 6 oz (170g) tomato paste 2 tsp kosher salt 1 tbsp sugar 1 tbsp Italian seasoning herbs (oregano, basil, rosemary, thyme, sage) 1/2 tsp black pepper 1/2 tsp red pepper flakes (1 tsp fennel seeds (if you like this spice) 1/4 cup (15g) fresh parsley 1/2 cup (25g) fresh basil For the Bechamel Sauce: 4 tbsp (55g) unsalted butter 4 tbsp (30g) all-purpose flour 4 cups (950ml) warm milk 1/2 tsp kosher salt 1/2 tsp black pepper 1/2 tsp garlic powder 1 cup (113g) parmesan cheese 16-17 lasagna pasta sheets 1 lb.
