Making A Ginger Flavoured Hard Cider 8.1% ABV (Turbo Cider Method)

Hi folks, in this film I’ll be making an extremely tasty apple and ginger cider using the turbo cider method of using apple juice from concentrate. 4 litres of apple juice is added to a 1 gallon demijohn along with some strong black tea, 300g brewing sugar and 100g of chopped crystallised ginger. I add Lalvin EC1118 champagne, sparkling wine and cider yeast and then leave this to ferment for 3 weeks. After 3 weeks I clear the cider with ClearIt wine finings from Youngs. Then after clearing it is bottled and conditioned for 2 weeks before I open it. The flavour is dry with a roundness from the apple accompanied by an intense ginger burn. It is extremely delicious and a must for anyone who likes ginger flavours.
