INGREDIENTS 1 chicken breast 1 small sausage with vinegar in pieces 2 TBsp olive oil 180 gr grated cheddar For the crepes: 330 ml of milk 2 eggs at room temperature 1/3 tsp baking powder 130 gr flour for all uses ½ TBsp melted butter 1 pinch of salt For the sauce: 1 TBsp olive oil 1 onion chopped 1 red pepper cut into cubes 1 yellow pepper cut into cubes 4 tomatoes cut into cubes 1 TBsp tomato paste ½ tsp salt 1 pinch of pepper ¼ κγ pepper cayenne 2 TBsp olive oil 1 handful of chopped parsley finely chopped DIRECTIONS In a pan put the chicken, cover it with water and put it on high heat. When it starts to boil, skim it (with a spoon remove the foam that has brought the meat to the surface), lower the heat to medium and leave it for 20 minutes, until it is soft and ready. Take it out of the pot (keep the broth for another use) and put it on a plate to cool. Remove the bones and cut it into small pieces. For the crepes in a bowl, beat the eggs with the whisk until fluffy. Add milk and salt. After mixing the baking powder with the flour, I gradually add them to the egg mixture. Finally, add the melted butter. Put a small frying pan on a medium to high heat and add butter. Pour 1 tablespoon of the scoop of ice cream from the mixture and turn it to cover the entire bottom of the pan. Leave it for about 2 minutes and when the edges start to come off it is ready and turn it on the other side. Leave the same time and put it on a plate. Continue the same procedure with the rest of the mixture. In a large frying pan, sauté the sausage pieces, frying them without adding fat. Put them back in their bowl. In the same pan, pour 2TBsp olive oil and sauté the chopped chicken, stirring. Put it back in the bowl and mix it with the sausage. For the sauce, heat 1 tbsp olive oil in a saucepan and sauté the onion and peppers until soft. Continue with the tomatoes, the tomato paste, the salt, the pepper and a little cayenne pepper. Add another 2 TBsp of olive oil, mix them all together, lower the heat to medium and let the sauce simmer for about 15 minutes. 2 minutes before the sauce is ready, add the chopped parsley, stir and then remove from the heat. To assemble, spread the sauce on the baking tray/pan to cover the bottom. Open each crepe one by one, fill it with 1 TBsp of sauce, 1 TBsp of meat, 1 Tbsp of cheese (put a total of 100 gr of cheese in all the crepes) and wrap it tightly. Place it in the pan on the sauce with its edge down (so that it does not open). Continue the same with the other crepes, putting them tightly next to each other in the pan. Cover with the rest of the sauce and sprinkle with 80 gr of grated cheddar. Put the pan in the oven, at 180 degrees Celsius/fan, for 20-30 minutes (if necessary put aluminum foil at the end of the time).
