I OWN ALL RIGHTS TO THIS VIDEO! © AMARU MUSIC / AMARU PRODUCTIONS 2012 On this episode of 'Food & The Single Guy' I bring you one of the stars of my country's (Black) cuisine: pinda bravoe or pinda soepoe (English pronunciation: 'peen-dah braah-foo' or 'peen-dah soo-poo'). The soup is made with a special type of peanut butter which is sold in stores that sell tropical products. Please scroll down for some tips and tricks about this soup that may come in handy. INGREDIENTS: peanut butter chicken salted beef allspice (pimento) cloves bay leaves yellow Scotch bonnet pepper onions garlic salt black pepper chicken cube parsley PREPARATION Boil the salted beef in water to both tenderize as well as get rid of the excess salt. Then cut the beef in nice little dice, like so. The salted beef adds a very nice flavor to your soup or other recipes, for that matter. Marinade your chicken with some salt and pepper. Don't use chicken breast, because you won't get a strong enough broth. Use some wings or thighs or drumsticks. And don't go overboard with the salt, because the peanut butter also contains salt. In the meantime, bring a generous amount of water to a boil. Add the chicken cube, the onion, the garlic, the bay leaves, the cloves and the allspice/pimento to the water and cook on high heat for about 7 minutes. After that add the chicken and tenderized salted beef and cook on medium heat for about 10 minutes with a regular stir. Now pour the peanut butter into a large bowl and scoop some of the delicious chicken broth out of your pan. This is what you're going to use to dissolve the peanut butter with. Make sure to end up with a mixture that's nice and creamy. Pour the dissolved peanut butter back into the pan and bring to a boil. Cook on medium heat for about 10 minutes and keep on stirring. You don't want the peanut butter to sink to the bottom and burn. Now add the yellow Scotch bonnet pepper, which will give the soup a very distinct flavor. Not to worry, it's not going to break, unless you want to break it yourself. Mind you, the yellow Scotch bonnet pepper is a very hot pepper. Anyway, cook the soup on low heat for another 15 to 20 minutes with an occasional stir. The soup is done when the chicken falls off of the bones. Garnish with some parsley et voila. The soup may be served with rice and/or mashed green plantain balls such as this one. If you wanna know how to make the mashed plantain balls, drop me a line. If you decide to try this soup, please don't use Jif or Skippy peanut butter. These are much to sweet and you will end up with a horrendous tasting soup. Try to look for the salted peanut butter at a supermarket that sells tropical products. TIPS & TRICKS: Bear in mind that this soup is very rich and extremely filling! Do NOT overeat! If you live in a tropical climate (or if you make this soup in the summer), do NOT cover the pan completely as the acids in the peanut butter combined with the heat outside will cause the soup to spoil. It will then taste terrible and very sour! If you wanna cover the pan, use a damp kitchen towel and clothes pins instead. This will allow the soup to cool off nicely and it will also prevent flies, which are in an abundance in summer and in the tropics, from laying their eggs on your soup. If the peanut butter you're using is too spicy, you may always use the regular version, which is generally speaking lightly salted and doesn't contain any pepper. This soup is even better the next day! If the soup thickens the next day, just reheat it on low to medium heat, give it a regular stir and it will return to looking like soup again. If it's still too thick for your taste, just add a little bit of water to make the soup a little less thick. Finally, and as stated in this video: BEAN SPROUTS DO NOT BELONG IN THIS SOUP!!!
