Date Night with Ellen | MUSHROOM RAGU | Fidel Gastro

It's that time again ladies and gentlemen. Matt and the crew are proud to bring you another Date Night with Ellen. This one featuring a spin on one of Matt's favorite recipes, Sugo and bread. Clearly that isn't going to work for a vegan so Matt has modified the dish making turning it into a mushroom Ragu. As a young man, or bambino as he was referred to in his family, Matt's grandfather would often make him a delicious dish called Sugo and bread. There are a myriad of recipes on-line for this tasty concoction which is essentially slow cooked beef in tomato sauce with a side of bread. That may sound a little unexciting to some of you but trust us, when made well this dish changes people's lives. That being the case it seemed like the perfect fit for a recipe that could be modified and turned into a delicious vegan friendly dish that even Ellen would enjoy. To make this mushroom ragu Matt has chosen oyster mushrooms as his main ingredient. The reasoning behind this is that they soak up a tremendous amount of liquid and after being cooked for a long period of time actually separate looking a lot like roast beef. The first step in this recipe is to get your pan hot, add olive oil to it, chopped onions, and diced garlic. Be sure to constantly stir this as it cooks down to avoid the possibility of burning. Once your onions start to turn translucent add the mushrooms to the pot as well as some canned tomatoes. Season this with salt, pepper, and anything else you see fit , stir in about a cup of water and put a lid on your pot allowing your dish to really can cook down. Let this simmer for approximately 3 hours, be sure to check on it about once every hour and don't forget to add in some fresh basil about halfway through.
