Hey friends! In this video I’m excited to share an original recipe I’ve been working on for a while: Breakfast Chili for the perfect start-of-the-day Breakfast 3-Ways. This “quick” skillet chili has a short simmer time and is designed to be served over a bed of crispy home fries and under a dippy, drippy fried egg to start your morning in the right direction. Featured tools from this video: 👉 Lodge 12 inch cast iron skillet: https://amzn.to/48K5Q28 👉 Lid for Lodge 12 inch cast iron skillet: https://amzn.to/4s6pWLK 👉 (Essential) Lodge cast iron skillet silicone holder: https://amzn.to/4aUb1Op 👉 Meat masher for awesomeness: https://amzn.to/3MHBZ1I 🔵Breakfast Chili (Skillet Breakfast 3-Ways) Serves about 4–6 Proteins 10–12 oz thick-cut bacon, cut into 1-inch pieces 12 oz mild breakfast sausage patties (8 patties total) Veg (“rabbit food”) 1 medium onion, diced 2 teaspoons garlic paste 1 red bell pepper, diced 1 yellow bell pepper, diced Chili seasoning blend 2 teaspoons kosher salt 1 teaspoon black pepper 1 teaspoon chili powder 1/2 teaspoon dried sage 1/2 teaspoon smoked paprika 1/4 teaspoon ground cumin Liquids 1 cup chicken broth About 1/4 cup strong coffee (add to taste) 1 teaspoon real maple syrup (stirred in at the end) For serving Home fries (cubed potatoes, olive oil, and seasoning below) Eggs for frying (about 1 per serving) All-purpose potato/veg seasoning (by “parts”) 3 parts kosher salt 1 part black pepper 1 part onion powder 1 part garlic powder 1/2 part dried oregano 1/2 part smoked paprika Basic method (from the video) 1) Cook bacon in a 12 inch cast iron skillet until crisp, then remove to a tray. 2) Sear sausage patties in the bacon fat on both sides, then chop into bite-sized pieces and cook through; remove to the same tray. 3) Sauté onion in the remaining fat, then add garlic paste. 4) Add diced red and yellow bell peppers and cook until softened and fragrant. 5) Stir in the chili seasoning blend to coat the vegetables. 6) Pour in chicken broth and a splash of strong coffee, then return the bacon and sausage to the skillet. 7) Bring to a simmer, reduce the heat, cover, and let it simmer for about 15–20 minutes while you make your home fries. 8) Finish the chili with real maple syrup, adjust seasoning to taste. 9) Serve the breakfast chili over crispy home fries and top with a dippy, drippy fried egg. ‼️Let’s connect!
