Here’s a simple recipe to make delicious poha: Ingredients 1 cup poha (flattened rice) 1 small onion (finely chopped) 1 small potato (chopped into small cubes) 1 green chili (chopped) ½ teaspoon mustard seeds ½ teaspoon turmeric powder 6-8 curry leaves 2 tablespoons peanuts 1 tablespoon oil ½ teaspoon sugar (optional) ½ teaspoon salt (or to taste) Juice of ½ lemon 2 tablespoons chopped coriander leaves Instructions 1. Prepare Poha: Rinse the poha in a colander under running water for a few seconds. Drain and let it sit for 5 minutes. It should be soft but not mushy. 2. Cook Potatoes & Peanuts: Heat oil in a pan. Add peanuts and fry until crispy. Remove and set aside. In the same pan, add chopped potatoes and cook until golden and tender. 3. Sauté Spices & Onions: Add mustard seeds to the pan. When they start to splutter, add curry leaves and green chilies. Add onions and sauté until soft and translucent. 4. Add Poha & Mix: Add turmeric powder, salt, and sugar. Mix well. Add the soaked poha and stir gently to coat it with the spices. 5. Finish & Serve: Squeeze lemon juice over the poha and mix. Garnish with fried peanuts and coriander leaves.
