Your family will like it. ⬇️⬇️English recipe follows ⬇️⬇️ 鹹酸菜炆雞翼 材料: 急凍雞翼10隻 鹹酸菜半包 薑1舊 蒜頭4粒 乾蔥頭4粒 辣椒仔3隻 處理: 1. 雞翼,清水解凍。 2. 鹹酸菜,清水浸。 3. 薑,去皮,切片。 4. 蒜頭,去皮。 5. 乾蔥頭,去皮。 6. 辣椒仔,去椗,打直1開2,去籽。 7. 雞翼解凍後,倒去水分,加入粗鹽1茶匙乸10分鐘,去除雪味、腥味及加入少許鹹味。 8. 鹹酸菜,揸乾水,沖洗3-4次。 9. 鹹酸菜,切細片,放碟上。 10. 雞翼,清水沖洗乾淨,擎乾水。 烹調: 1. 鹹酸菜,白鑊、大火烘乾,令它出味,同時爆香薑片,轉中火,爆1分鐘,推向鑊邊。 2. 大火在鑊中燒熱油1湯匙。 3. 加入蒜頭及乾蔥頭爆香,推向鑊邊。 4. 加入雞翼,煎香。 5. 雞翼一面已煎至金黃色,反轉繼續煎,轉慢火。 6. 加入調味料: a. 蠔油1湯匙 b. 生抽半湯匙 c. 糖1湯匙 轉大火,炒勻。 7. 加入清水100毫升,炒勻,冚蓋,燜2分鐘。 8. 加入適量生粉芡,炒勻。 9. 加入辣椒,炒勻。 10. 完成,上碟,可享用。 Braised chicken wings with pickled vegetables Ingredients: Frozen chicken wings 10 Nos. Pickled vegetables half pack Ginger 1 No. Garlics 4 Nos. Shallots 4 Nos. Chili 3 Nos. Preparation: 1. Chicken wings, defrost in tap water. 2. Pickled vegetables, soak in tap water. 3. Ginger, get it peeled and sliced. 4. Garlics, get them peeled. 5. Shallots, get them peeled. 6. Chili, cut the anchor. Divide it into 2 shares vertically. Remove seeds. 7. The wings have been defrosted, pour away water. Add in 1 tsp of cooking salt, season for 10 minutes, to remove unpleasant smells and add some salty tastes to them. 8. The pickled vegetables, squeeze it. Rinse 3-4 times. 9. The pickled vegetables, slice it. Put on plate. 10. Chicken wings, rinse thoroughly. Drain. Steps: 1. The pickled vegetables, plain wok, dry it at high flame to release the flavour. Fry the ginger at the same time. Turn to medium flame, fry for a minute. Push it to the edge of wok. 2. Heat up 1 tbsp of oil at high flame in wok. 3. Add in garlics and shallots, fry well, push to the edge of wok. 4. Add in chicken wings, fry well. 5. The chicken wings, one side has been fried into golden yellow, flip over and continue frying. Turn to low flame. 6. Add seasoning: a. Oyster sauce 1 tbsp b. Light soya sauce 0.5 tbsp c. Sugar 1 tbsp Turn to high flame, fry well. 7. Add in 100ml of water, fry well. Cover up the wok. Braise for 2 minutes. 8. Add in appropriate amount of tapioca sauce, fry well. 9. Add in chili, fry well. 10. Complete. Put on plate.
