I love Little Debbie's Oatmeal Creme Pies. They are one of the few plastic wrapped, shelf stable junk food confectionaries I enjoy along with honey buns. This recipe from Stella Parks' is next level though. The flavors from the ginger, cinnamon and nutmeg make it explosive while the powdered oats give it a wonderful texture. A few blunders I made with this one was I let the temp rise too much when cooking out the syrup for the marshmallow filling and I also let the temp dip too much when I was letting it cool . This resulted in a very thick, stiff filling that was hard to pipe (you can see me struggling in the video) Second blunder was just a misread of the recipe, I added triple the amount of baking powder that I was supposed to add. Somehow, even with the two above blunders, they came out tasting delicious with the perfect texture. Also, they are darker than they are supposed to be because I used dark brown sugar, I had run out of light brown sugar. Since this is not a publicly published recipe (I got it from her book which I own), I unfortunately cannot post the recipe. However, you should definitely buy her book! It is filled with information and awesome recipes. Thanks for watching!
