Its taste is unique & delicious. I have provided enough tips to get the same taste like the one served in wedding parties. Enjoy the recipe. Some misunderstanding in the Rice, Water & Coconut milk ratio. Below is the right ratio. if rice Soaked for 20 mins : 1 cup rice 1 cup water 1/2 cup coconut milk if rice not Soaked in water : 1 cup rice 1.5 cups water 1/2 cup coconut milk if rice Soaked for 20 mins : 2 cups rice 2 cups water 1 cup coconut milk if rice not Soaked in water : 2 cups rice 3 cups water 1 cup coconut milk Ingredients: ************ Basmati rice- 2 cups or 400 grams Bread- 2 Cloves- 6 Cardamom- 5 Cinammon stick Mace Bay leaves- 3 Fennel seeds- 1 tsp Green chillies- 4 Coconut Milk- 1 cup Red chilli powder Coriander leaves Mint lemon juice- 1 tbsp Tomato- 1 Ginger garlic Paste- 2 tbsp Beans/Carrot/Potato- 300 grams Green Peas- 1 cup Salt Oil Ghee Preparation: ************ Take 2 cups or 400 grams Basmati rice & soak it in water for 20 mins. Take good grade Basmati rice, it is vital to get nice taste. In a heated Pan, add 2 tbsp oil & 1 tbsp ghee. Once it is melted add 6 cloves, 5 cardamom, cinnamon stick, Mace, 3 bay leaves, 1 tsp Fennel seeds & saute for 1 min. Once the aroma starts coming out of the spices add 2 finely chopped onions & saute well. Add 4 spliced green chillies & saute well. I have used chilli powder in this Brinji. If you want to do white brinji add more green chillies. Add 1 finely chopped tomato. Once the tomato is sauted really well & smashed add 2 tbsp ginger garlic paste & saute till raw smell disappears. Add 300 grams finely chopped Carrot, Beans & Potato. Add 1 cup peas, salt & mix it well. Do not cut the vegetable too small otherwise it gets smashed. Add 1.5 tsp red chilli powder & saute well. Saute till the vegetables cooked till half boiled consistency. Add 1 cup coconut milk & 2 cup water & mix it well. As we have soaked the rice earlier, i have added less water otherwise add water 1:2 ratio. Add salt required for rice & mix it well. Once its started boiling, add the soaked rice & mix it well. Add 1 tbsp lemon juice, coriander leaves, mint & mix it gently. Finally add 1/2 tsp sugar, it acts as a taste enhancer & its optional only. Mix it well. I am going to do a slow cooking(Dum). Place a unused tawa on the stove, place the brinji pot on top of it, cover it with a plate & place water on top of it. Maintain low flame & cook it for 20 mins. This is the process for slow cooking. In the mean time, fry the bread slices. Take 2 bread, remove the outer part & cut into small slices. Fry them in oil/ ghee till turns golden brown. After 20 mins slow cooking, Brinji will be ready. Mix the fried sweet bread pieces with the Brinji. Leave it for few mins before serving to soak it well. After its soaked well with Brinji, bread slices tastes really nice.
