This pecan pie without corn syrup is truly the BEST pecan pie recipe. It’s simple and quick to make and the thing is, it doesn’t have to be just pecans. Use the same batter and change the nuts every time to make it a bit different… Pecans, walnuts, almonds, sunflower seeds, flax seeds, pumpkin seeds… Everything goes! Pecan Pie Recipe Without Corn Syrup… Ingredients: Crust: Use homemade crust or the traditional crust from the store. Filling: 3/4 cup brown sugar 2 large eggs 1/4 teaspoon salt 1/4 cup all purpose flour 1 teaspoon vanilla extract 1 stick of melted butter (cooled slightly) 1 1/2 cup of nuts (or nuts and seeds) For the Top: 1 cup of nuts (or nuts and seeds) Honey (about 1/4 cup) Instructions: 1. Heat your oven to 400 degrees F. Line a baking sheet with parchment paper. Set the pie crust on the sheet and line it with parchment paper. Add dry beans or pie weights onto the parchment paper to hold the crust down as it bakes. 2. Bake the crust for 15 minutes. 3. In a bowl, mix the sugar and eggs. Add salt, flour, and vanilla extract and mix to combine. 4. Add the melted butter as you mix, a little bit at a time. 5. Add 1 1/2 cups of nuts and use a spatula to mix them in. 6. When the crust is ready, remove from the oven and lower the oven temperature to 335 degrees F. 7. Remove the parchment paper with the dry beans or pie weights and add the filling. 8. Bake for 15 minutes. 9. Remove from the oven and top with 1 cup of nuts and drizzle with the honey. 10. Return to the oven and bake for an additional 8 minutes or until the center is set. ** In my oven it was about 8 minutes, in yours it might be a little more. When I make this pie at my mother’s I sometimes need to bake it an additional 15 minutes. 11. When the center is set, remove from the oven and let cool completely before serving. You can keep this pie at room temperature for a few days or keep it in the fridge. This pie can easily be made a couple of days before an event and you can also freeze it!
