This recipe is for 1 pizza base. i always make 2 and have one cold the next day. Cottage Cheese Pizza Base Ingredients (Base) 250 g cottage cheese 1 egg 15 g Parmesan cheese Salt and pepper to season Approximate Nutritional Value (Whole Base) Nutrient Amount Calories ~300 kcal Protein ~34 g Fat ~16 g Carbohydrates ~5 g Fibre ~0 g Calcium ~300–350 mg Values are approximate and will vary depending on the brand of cottage cheese and Parmesan used. This base is high protein and low in carbohydrates, making it a satisfying lighter alternative to traditional pizza bases. Instructions Preheat the oven to 180°C. Prepare your dish Lightly grease a small round ovenproof container and line with parchment paper if needed. Mix the base In a bowl, combine the cottage cheese, egg, Parmesan, and a little salt and pepper. Mix together well using a hand whisk until smooth. Bake the base Pour the mixture into the prepared container and place in the oven for 20 minutes. Check the base After 20 minutes, keep an eye on it to make sure it doesn’t overcook. Brown the underside Turn the base out onto a rack so the paler side is facing up. Place it back into the oven for 10 minutes to lightly brown. Allow to cool slightly Remove from the oven and allow it to cool for a few minutes. Add the Toppings Mix together: ½ tomato paste ½ passata Spread over the base. Top with your favourites. Mine are: mushrooms onions red peppers feta Return to the oven until the toppings are cooked through. I served mine with homemade hummus and a fresh salad on the side, which made it a really satisfying, balanced meal.
