These no-bake date bars come together with just a handful of ingredients, yet they turn out incredibly rich and satisfying. Soft Medjool dates create the base, roasted nuts add texture, and cocoa deepens the flavor into something that feels almost like a chocolate dessert. There’s no baking involved and no complicated steps—just blending, layering, and slicing into dense, fudgy bars. If you enjoy simple, nourishing desserts made from real ingredients, this is a wonderful recipe to keep on hand. Ingredients Base Layer • 300 g Medjool dates (pitted) • 80 g roasted almonds • 70 g roasted walnuts • 20 g unsweetened cocoa powder • 1 g salt (a pinch) • 8 g coconut oil or ghee (optional) Filling Layer • 120 g white chocolate • 5 g coconut oil ⸻ Roasting: Roast nuts at 325°F(165°c) for 15 minutes Method 1. Add the roasted almonds and walnuts to a food processor and pulse until they break into small pieces. Avoid grinding them into a powder so the bars keep a pleasant texture. 2. In a separate step, blend the pitted dates until they form a thick, sticky paste. If the dates feel slightly dry, add 5–10 g of warm water to help them blend smoothly. 3. Add the cocoa powder, salt, coconut oil (or ghee), and the chopped nuts to the date paste. Pulse briefly until everything comes together into a dark, fudgy mixture. 4. Press the mixture firmly to create a bar leaving a cavity in the center. 5. Melt the white chocolate gently and stir in the coconut oil until smooth. 6. Spread the melted chocolate evenly in the cavity of a base layer. 7. Let the chocolate set completely. 8. Slice using a sharp knife, wiping the blade between cuts for clean edges. ⸻ These bars store well in the refrigerator and make a great snack, dessert, or quick energy bite.
