Sarah's Tip of the Day: Start by making a salad from an English cucumber, celery stalks and leaves, and a white onion, before coating it in a dressing made from cucumber seeds, mayonnaise, champagne vinegar, and cilantro. Next, season skinless chicken cutlets with salt before grilling and serving with your salad piled on top! This meal tastes so summery and fresh that you might just forget that it's also super healthy. Thinly slice celery stalks and onion; place in a large bowl along with cucumber ribbons. In a blender, puree reserved cucumber center, mayonnaise, cilantro, and vinegar; season with salt and pepper and add to bowl. Toss to combine and top with celery leaves if desired.
